Broccoli and “Cheese” Soup

Who loves a good old cup of broccoli and cheese soup?

You’d never guess that there’s no dairy in this rich, creamy broc- coli “cheese” soup. It’s made from a savory and nutritious blend of broccoli, coconut milk, and nutritional yeast. It’s so delicious, you won’t even miss the cheese.

I obviously substituted the chicken stock for Hale Bone Broth to make it “the Hale Life way”!!

Ingredients:

1 teaspoon olive oil1 medium yellow onion, peeled and chopped

2 teaspoons minced garlic

3 cups Hale Bone Broth

1 cup full-fat coconut milk

5 cups roughly chopped broccoli florets

1⁄3 cup nutritional yeast

1⁄4 teaspoon salt

Instructions:

1 Heat oil in a large pot over medium heat.

Add onion and garlic and sauté for 3–4 minutes until softened.

Add broth, coconut milk, broccoli, nutritional yeast, and salt. Stir to combine.

Reduce heat to medium-low and simmer for 12–15 minutes until broccoli is tender.

Remove from heat, then transfer soup to a blender and process until smooth or until desired consistency is reached (or use a handheld blender).

Serve immediately
