Peach + Blueberry Summer Salad

Ingredients:

  • 1/2 c. white balsamic vinegar

  • 2 tsp. finely grated lemon zest

  • 1 tsp. Dijon mustard

  • 1/2 tsp. Kosher salt

  • 1 c. extra-virgin olive oil

  • 1/2 c. finely chopped shallot

  • 1 tsp. honey

  • 4 medium yellow peaches, halved lengthwise and sliced 1/4” thick

  • 4 small mini cucumbers, sliced 1/4” thick

  • 2 c. fresh blueberries

  • 2 tbsp. thinly sliced fresh basil

  • 4 c. spinach/arugula mix

  • 3/4 c. crumbled goat cheese

Directions:

  1. In a large bowl, whisk vinegar, lemon zest, mustard, and salt. While whisking, slowly pour in the olive oil until smooth and emulsified. Add the shallots and honey, whisk to combine.

  2. Add the peaches, cucumbers, blueberries, and basil. Toss to combine, then pour over mixed greens. Top with goat cheese.
