Winter Warm-Up Soup

February has been filled with lots of snowy days, chilly nights, and food to keep us warm and cozy.

Check out this “Winter Warm-Up” Soup

Ingredients:

1 onion peeled and thinly sliced
1 tbsp avocado oil
Duxbury Salt Works sea salt and pepper
1 - 13.5 oz can coconut milk full fat
1 cup cooked quinoa (or cauliflower rice)
1 roasted butternut squash diced and peeled
1 head broccoli cut into 1 inch florets
2 cup
Hale Bone Broth
Fresh parsley
1 tsp. fresh ginger
1 tbsp. unsweetened coconut flakes
1/2 tsp. ground cumin
1/2 tsp. curry powder
Dash coconut aminos at end
Optional a pinch of nutmeg or cinnamon

Instructions:

In a large skillet, heat the oil and saute the onion for 7 minutes over medium heat, stirring often until soft and translucent. Add the remaining ingredients. Cover and bring to a boil then, simmer for 15 minutes or until the broccoli is tender. Transfer to serving bowls and serve warm with a splash of coconut aminos.
